WONTON MAMA

WONTON MAMA returns to Fairmont Vancouver Airport for a second season, bringing the vibrant spirit of Hong Kong street food to the West Coast through a distinctly Chinese Canadian lens. Created by MAMAintheKitchen and Chef Will Lew, this limited-time pop-up celebrates the flavours, memories, and cultural traditions that connect generations and communities.

At its heart is the vision of Chef Sharon Chan, founder of MAMAintheKitchen, who believes that taste is memory. Inspired by Hong Kong’s bustling noodle shops, cafés, and street-side eateries, WONTON MAMA brings together family-inspired recipes, locally rooted ingredients, and the comforting flavours of home. From hand-crafted wontons and fresh noodles to dim sum, Chinese BBQ, shareable bites, and cocktails inspired by Vancouver’s historic Chinatown, every dish tells a story.

This season, WONTON MAMA welcomes a new cultural collaboration with the Chinese Canadian Museum through CCM: The Gallery Lounge, a curated space featuring selected moments from the Museum’s past exhibitions. Bringing together art, historical artifacts, and visual storytelling, the installation invites guests to explore the richness of Chinese Canadian history, creativity, and identity. In support of the Museum’s work, $1 from every order will be donated to the Chinese Canadian Museum.

The experience also features an exclusive collaboration donut created with Lee’s Donuts, alongside limited-edition WONTON MAMA merchandise available on-site. Rooted in the belief that food is a powerful expression of heritage, the pop-up honours the stories that came before us while creating new memories around the table.

Located on the Lobby Level of Fairmont Vancouver Airport, WONTON MAMA brings together travellers, locals, and hotel guests in a shared celebration of food, culture, and community.
